Irish Nachos are a fun twist on the classic nachos! Instead of using tortilla chips as the base, they use crispy potato slices or fries. The potatoes are typically loaded with cheese, bacon, green onions, and sometimes sour cream or other toppings. Here’s a basic way to make them:
Ingredients:
- 4 medium-sized potatoes (Russet works well)
- 2 cups shredded cheddar cheese (or a cheese blend)
- 1/2 cup cooked bacon, crumbled (or bacon bits)
- 2 green onions, sliced
- 1/2 cup sour cream (optional)
- Olive oil (for drizzling)
- Salt and pepper, to taste
- Jalapeños or other toppings (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Prep the potatoes: Wash and slice the potatoes into thin rounds (about 1/4-inch thick). If you want them extra crispy, you can cut them into wedges.
- Cook the potatoes: Toss the sliced potatoes in olive oil, salt, and pepper, then spread them out in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Assemble the nachos: Once the potatoes are crispy, remove them from the oven. Sprinkle shredded cheese, crumbled bacon, and green onions over the potatoes.
- Melt the cheese: Put the tray back in the oven for 5-7 minutes or until the cheese is melted and bubbly.
- Garnish: After removing from the oven, add sour cream and any other toppings you like, such as jalapeños or extra green onions.
Serve immediately, and enjoy these hearty, flavorful Irish Nachos!
